Normandy's cuisine is determined by its geographical position, with the fertile soils of Normandy providing an abundance of agricultural produce, while the sea provides a generous supply of fish and shellfish. Normans love good food, and their cuisine is distinguished mainly by its agricultural and fish products.

 Normandy cows and Jersey cows are renowned for the quality of their milk. The region's dairy products, and especially its cheeses, take pride of place: the Normans' use of butter and cream in their cooking is almost legendary. It was the Normans who imposed the use of butter instead of lard in French cuisine at the end of the Renaissance.

As for cheeses, Camembert is without doubt the best-known French cheese in the world.

Apples play a major role in Norman cuisine, both in desserts and in the production of cider and cider brandy, known as Blanche, or calvados. The trou normand is a small glass of calvados, swallowed in one gulp in the middle of a meal to stimulate the appetite. Pommeau, an aperitif made from calvados and cider, is increasingly exported.
